Creamy Garlic Chicken & Broccoli Penne

Ingredients

  • 1 lb Skinless, Boneless Chicken Breast Halves
  • 12 oz Penne
  • 3 cup Broccoli
  • 1 medium Onion
  • 3 clove Fresh Garlic
  • 1 tbsp Olive Oil
  • 2 tbsp Butter
  • 2 tbsp All-Purpose Flour
  • 1 cup Chicken Broth
  • 1.5 cup Half-And-Half
  • 0.5 cup Parmesan Cheese (grated)
  • pinch Salt (to taste)
  • pinch Pepper (to taste)
  • 1 tsp Italian Seasoning

How to cook

    Cook penne according to package directions; drain and set aside.

    Dice chicken breast into 1-inch pieces. Chop onion and mince garlic. Cut broccoli into small florets.

    In a large skillet or pot, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

    Add butter to the skillet. Once melted, add onion and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute until fragrant.

    Whisk in all-purpose flour and cook for 1 minute, stirring constantly, to create a roux. Gradually whisk in chicken broth until smooth, then stir in half-and-half. Bring to a gentle simmer, stirring frequently, until sauce thickens slightly.

    Return chicken to the skillet. Add broccoli florets, cover, and simmer for 5-7 minutes, or until broccoli is tender-crisp.

    Stir in cooked penne, Parmesan cheese, Italian seasoning, salt, and black pepper. Toss to combine and serve warm.
