Mini Bell Pepper & Corn Quesadillas
Quick and cheesy mini quesadillas filled with colorful bell peppers and sweet corn, pan-fried until golden. Perfect for a savory snack.
Ingredients
- 4 whole tortillas (small, or 2 large cut in half)
- 1 cup Mexican shredded cheese blend
- 0.5 whole bell pepper (any color, finely diced)
- 0.25 whole red onion (finely diced)
- 0.5 cup corn (canned, drained, or frozen)
- 1 tablespoon olive oil
- 0.5 teaspoon cumin
- 0.5 teaspoon chili powder
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 1 serving salsa (for serving)
How to cook

In a small bowl, combine the diced bell pepper, red onion, corn, cumin, chili powder, salt, and black pepper. Mix well.

Heat olive oil in a non-stick skillet over medium heat.

Place one tortilla in the skillet. Sprinkle half of one side with cheese, then top with a portion of the vegetable mixture, and more cheese. Fold the tortilla in half to create a crescent shape.

Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and bubbly. Repeat with remaining tortillas and filling.

Remove from heat, cut into wedges if desired, and serve immediately with salsa.
