Whipped Feta with Honey and Pistachios

Cold feta and cream cheese whirled smooth, finished with hot honey, toasted pistachios, and torn herbs. Five-minute appetizer that disappears in three.

Ingredients

  • 8 oz block feta in brine, drained
  • 4 oz cream cheese, room temperature
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • 0.33 cup honey
  • 0.5 tsp red pepper flakes
  • 0.33 cup shelled pistachios, toasted and roughly chopped
  • 2 tbsp fresh mint or dill, torn
  • flaky sea salt
  • pita chips or warm pita, for serving

How to cook

    Crumble the feta into a food processor with the cream cheese, olive oil, and lemon juice. Run 60 seconds, scraping down the sides once, until smooth and fluffy.

    In a small skillet, warm the honey with the red pepper flakes over low heat for 90 seconds until just runny. Off the heat.

    Spread the whipped feta on a shallow plate or bowl with the back of a spoon — leave swooshes for the honey to pool in.

    Drizzle the hot honey generously over the top.

    Scatter the pistachios, torn herbs, and a pinch of flaky salt.

    Serve with pita chips. Best eaten within an hour while the feta is still cold and the honey still warm.
