Mediterranean Baked Eggs with Feta and Spinach

Ingredients

- 0.5 small onion
- 1 clove garlic
- 0.5 can diced tomatoes
- 2 cup fresh spinach
- 0.5 tsp dried oregano
- 1 pinch salt (to taste)
- 1 pinch black pepper (to taste)
- 4 large eggs
- 0.25 cup crumbled feta cheese
How to cook

Preheat oven to 375°F (190°C). Heat olive oil in a small, oven-safe skillet over medium heat. Add chopped onion and sauté until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.

Pour in the diced tomatoes, oregano, salt, and pepper. Bring to a simmer, then add the spinach, stirring until it wilts, about 2-3 minutes. Create four small wells in the tomato mixture.

Carefully crack an egg into each well. Sprinkle the crumbled feta cheese evenly over the top.

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the egg whites are set and the yolks are still slightly runny. Serve immediately with crusty bread for dipping, if desired.
