Dark and Stormy with Fresh Lime
Black rum floating on spicy ginger beer, fresh lime cutting through both. Order it in Bermuda; make it better at home with fresh juice.

Ingredients
- 2 oz dark rum (Gosling's Black Seal is the only correct answer)
- 0.5 oz fresh lime juice
- 4 oz spicy ginger beer (Fever-Tree or Q)
- 1 lime wedge, for garnish
- 1 piece candied ginger, optional
- ice
How to cook

Fill a highball glass with ice cubes.

Pour the ginger beer over the ice. Add the lime juice.

Slowly float the rum on top by pouring over the back of a bar spoon — the rum should layer on top, not mix in.

Garnish with the lime wedge and (if using) a piece of candied ginger speared on a pick. Stir before drinking if you want it mixed; leave it layered for the visual.
Chef's note. The fresh lime juice is the cheat — most bars skip it. Half an ounce of real lime juice is the difference between a drink and a cocktail.
