Sesame-Ginger Green Beans
Blistered fast in a hot pan, finished with garlic, ginger, and toasted sesame. Side dish you can build in less time than it takes to set the table.
Ingredients
- 1 lb green beans, trimmed
- 2 tbsp toasted sesame oil
- 4 clove garlic, sliced thin
- 1 tbsp grated fresh ginger
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 0.5 tsp red pepper flakes
- 1 tbsp toasted sesame seeds
How to cook
- 1
Heat a wok or large skillet over high heat until smoking. Add the sesame oil.
- 2
Add the green beans in a single layer. Let sit 90 seconds without moving — you want blistered char marks.
- 3
Toss and cook 3 more minutes, tossing only every 30-45 seconds, until the beans are bright green with brown spots.
- 4
Reduce heat to medium. Push the beans to one side; add the garlic and ginger to the empty side. Stir 30 seconds until fragrant.
- 5
Add the soy sauce, rice vinegar, sugar, and pepper flakes. Toss everything together 60 seconds until the liquid evaporates and glazes the beans.
- 6
Off the heat, finish with the sesame seeds.
