Aperol Spritz
The 3-2-1: prosecco, Aperol, a splash of soda. Big ice, orange wheel, the official drink of any sunny afternoon since 1919.
Ingredients
- 3 oz dry prosecco, chilled
- 2 oz Aperol
- 1 oz club soda
- 1 orange slice
- 1 large green olive, optional
- large ice cubes
How to cook

Fill a large wine glass with 4-5 big ice cubes.

Pour the prosecco in first. This matters — pouring Aperol first lets it sink, and the drink fails to stratify.

Pour the Aperol over the prosecco. The orange color sets in layers above the wine.

Top with the club soda — about a tablespoon, no more.

Drop in the orange slice. If you are doing it Italian-style, an unpitted Castelvetrano olive on the side.
Chef's note. Prosecco quality is the lever; pick a brut DOC, not the sweet kind. La Marca and Mionetto are both solid for $12.
