Banana & Cinnamon Oat Pancakes
Fluffy and comforting pancakes made with ripe bananas and hearty oats, lightly spiced with cinnamon. A sweet and satisfying treat for a late-night craving.
Ingredients
- 1 cup Rolled Oats
- 0.5 cup All-Purpose Flour
- 1 tbsp Brown Sugar
- 1 tsp Baking Powder
- 0.5 tsp Cinnamon
- 0.25 tsp Salt
- 1 medium Banana
- 1 large Egg
- 1 cup Whole Milk
- 1 tsp Vanilla Extract
- 1 tbsp Canola Oil (for cooking)
- splash Maple Syrup (for serving)
How to cook

Pulse the rolled oats in a blender or food processor until they resemble a coarse flour. In a large bowl, whisk together the oat flour, all-purpose flour, brown sugar, baking powder, cinnamon, and salt.

In a separate medium bowl, mash the ripe banana with a fork. Whisk in the egg, milk, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine. Let the batter rest for 5 minutes.

Heat canola oil on a griddle or large non-stick skillet over medium heat. Pour 1/4 cup of batter per pancake onto the hot surface. Cook for 2-3 minutes per side, or until golden brown and cooked through.
