Banana Blueberry Pancakes
Fluffy, golden pancakes studded with sweet bananas and juicy blueberries, a classic and comforting breakfast treat that's easy to make.
Ingredients
- 1 cup All-Purpose Flour
- 1 tbsp Sugar
- 1 tsp Baking Powder
- 0.5 tsp Baking Soda
- 0.25 tsp Salt
- 1 Egg (large)
- 1 cup Milk
- 2 tbsp Butter (melted, plus more for griddle)
- 0.5 Banana (mashed)
- 0.5 cup Blueberry
- 0.5 tsp Vanilla Extract
- 1 tbsp Maple Syrup (for serving)
How to cook

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract. Add the mashed banana and stir to combine.

Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are okay. Gently fold in the blueberries.

Heat a lightly buttered griddle or large non-stick skillet over medium-low heat. Pour about 1/4 cup of batter per pancake onto the griddle.

Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve immediately with maple syrup.
